Chicken Phyllo Rolls (Tavuklu Börek)


For about 15 rolls

1 onion * 2 tbsp olive oil * 1 chicken cheast cooked and minced * black pepper * salt * red pepper * dried thyme * 3 phyllo dough sheets (yufka) * 1 egg * 3 tbsp plain yogurt * 125 g melted margarine

To garnish:

1 egg yolk

Bring to fire the minced onion with the olive oil. Add the chicken and the seasonings and cook on low fire for about 10 minutes. Reserve. Mix the yogurt with an egg and the melted margarine. Open each of the phyllo dough sheets, brush the surface of each with the liquid mixture and superimpose the three. Cut equal squares and cover each with the chicken. Wrap each one, bending the ends to the inside. Brush each roll with an egg yolk. Place in a greased oven tray and bake on 200° pre-heated oven until they become crusty.
